Here is the recipe without a long story about why I made this recipe. What I went through to get the recipe. What my holiday traditions are, ect. lol! Enjoy!
Sugar cookies
1/2 cup butter cold (or dairy free substitute)
1 cup sugar
1 egg (room temperature)
1 tsp vanilla
1 tsp almond extract
1 1/2 cup white rice flour
3/4 cup tapioca starch
1/2 tsp salt
1 tsp corn starch
Add wet ingredient and mix in a stand mixer.
Add dry ingredients.
Refrigerate for at least an hour.
Roll in between parchment paper (you can use small amount of tapioca starch if it's sticky but it shouldn't be).
Use cookie cutters and place on baking sheet (greased or with parchment paper)
Bake 10 - 14 minutes at 325 degrees depending on thickness.
Let cool before decorating.

Frosting: I love Simple Mills Organic Vanilla Frosting (made with coconut oil! No vegetable oils!) Or you can make your own with coconut oil or kerry gold butter, almond milk, organic powdered sugar and vanilla! I get most of these products from Thrive Market !
